Vacation Checklist

Vacation is coming up fast! We are taking a 14-16 hour road trip with a four-year-old and a two-year-old. That in itself would lead to a ton of planning. Now, throw in some food allergies and that it’s basically impossible to eat out. Yup, it’s a lot of planning. Luckily we are staying with some awesome family who are very supportive and will allow us to invade their home, most importantly, invade the kitchen.

Here’s my checklist of what “extra’s” I’ll be packing:

Home Made Pumpkin Muffins for two breakfasts

Home Made Rice Crispies

1 Container Coconut Milk

Fruit snacks galore

Allergy-free pretzels

Coconut Yogurt

Captain Crunch

Ham- for one breakfast

BBQ Chicken

Lunch meat

Lay’s BBQ chips

Fruit: Oranges, Apples, watermelon

Pasta sauce (the one we use not available where we’re going)

Enjoy Life Bars

Enjoy Life Cookies

Flour

Xanthan Gum

Medications: Epi Pens x4, Zyrtec, Hydroxyzine, Benadryl, Singulair, Lotions, Steroid Creams

I’m sure I’m missing something. I’m beginning to think we may not have much room for anything BUT food. Now I need to find a way to stuff all this into a cooler and a milk crate. Once I do it, I’ll take a picture.
